Serves 6
Graham Cracker Crust:
16 crushed graham crackers
1/4 cup butter (softened)
3 Tablespoons sugar
1 cup finely chopped walnuts (optional)
Directions:
Combine all ingredients and shape into a 9″ pie plate.
Bake at 300 degrees for 10-15 minutes.
Set aside to cool.
Pie Filling:
1 quart vanilla ice cream
1/2 (6 oz or 1/3 cup) can frozen lemonade concentrate
2 drops of red food coloring
Frozen fruit (optional)
Directions:
Set ice cream in a bowl to soften.
Fold in lemonade concentrate and food coloring.
Add fruit.
Spoon into graham cracker crust.
Sprinkle a few crackers crumbs on top.
Place back in freezer until ready to serve.
