It was a long standing tradition in the Terry family to serve Apple Pudding every Christmas. The warm, rich flavor brings love and happiness all around!
INGREDIENTS:
1.5 cups flour
1.5 teaspoons baking soda
2 teaspoons cinnamon
3/4 teaspoon nutmeg
0.5 teaspoons salt
1.5 cups sugar
0.5 cup butter (softened)
2 eggs
3.5 cups apples (peeled and grated)
1 cup nuts (chopped)
DIRECTIONS:
1. Mix together flour, baking soda, cinnamon, nutmeg and salt.
2. In a separate bowl, cream sugar and butter together. Add egg and beat with mixer.
3. Stir in dry ingredients.
4. Fold in apples and nuts.
5. Spray 9 x 13 cake pan with cooking spray.
6. Pour mixture into pan and bake at 350 degrees for 35 minutes.
PUDDING SAUCE:
0.5 cup butter
1 cup sugar
0.5 can evaporated milk
1.5 teaspoons vanilla
Dash of nutmeg
SAUCE DIRECTIONS:
1. Cook all ingredients over low heat until dissolved.
2. Add vanilla and nutmeg.
3. Bring to a full, rolling boil for 2 minutes while stirring constantly.
Tip: can freeze and reheat the sauce as needed.
SERVING SUGGESTIONS:
Serve square of cake in a bowl and pour about 0.25 cups of warm sauce over the top.
You can also add a dollop of whipped cream on top for extra flavor.
